
California Mediterranean Salad

Ingredients
- 3 ripe tomatoes, diced
- 1 large cucumber, peeled, cut into chunks
- 1 small red onion, finely minced
- 2 small avocados, peeled, pitted and cubed
- ¼ cup minced parsley
- ¼ cup fresh lemon juice
- 2 tablespoons olive oil
- Salt and black pepper to taste
- ½ cup Kalamata olives
Preparation
Combine diced tomatoes, cucumbers, minced onion, cubed avocados and parsley. Whisk together lemon juice and olive oil and pour over salad. Season with salt and pepper to taste. Toss with olives and serve.
